How to make Cheese Cabbage Potato Soup

Fall is almost here...and there is nothing like a good bowl of soup on a brisk Autumn day.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 1 small Onion, chopped
  • ¼ C. Margarine
  • 2 T flour
  • 2 C Chicken broth
  • 2 C Milk
  • 5 C Cabbage, chopped
  • 2 C Cheddar cheese, shredded
  • 6 Potatoes
  • 1 Bag frozen Mixed Veggies

Step1
Peel potatoes and cut into chunks; boil. Prepare Chicken Broth. (use either canned or water and chicken bullion.)
Step2
Melt Butter in a skillet and added chopped onion; brown. Add flour to onion mixture and cook until thick.
Step3
In a large pot, combine milk, chicken broth and the cooked onion mixture. Cook on medium high for 10 minutes stirring often.
Step4
Add potatoes, cabbage and mixed veggies. Cook approximately 20-30 minutes on medium heat stirring often.
Step5
Add cheese; cook until melted. Serve.

Tips & Warnings

  • This is one of those meals that tastes even better the next day.
