Planting herbs can be lots of fun, but once they take root you can be overwhelmed with herbs. Here is a quick way to keep up with your harvesting and preserve them for future use. Herbal honeys are wonderful in teas and baking.

Difficulty: Easy
Instructions

Things You'll Need:

  • Honey
  • Fresh herbs
  • Strainer
  • Bottles
  1. Step 1

    In a small saucepan, combine 2 cups of honey for every 1/2 cup of fresh herbs.

  2. Step 2

    Bring to a boil over medium heat, and then remove the pan from the burner and let cool. Repeat this process three times a day for three days.

  3. Step 3

    On the third day strain and bottle the honey while it is still warm.

Tips & Warnings
  • Herbal honey's keep in the cupboard for years!
  • Suggested herbs: mint, ginger, thyme, anise hyssop, lemon balm, bee balm blossoms and rose petals.
  • Do not use herbs that have been exposed to pesticides!
