How to Make Vegetarian French Onion Soup

This is a vegetarian take on the classic French Onion Soup. It's made with vegetable broth for all those veggie lovers out there!

Instructions

Things You'll Need:

  • Onion (sweet)
  • Vegetable broth cubes
  • water
  • Bread (white loaf)
  1. Step 1

    Take 1 large onion, preferably a Vidalia or Spanish onion (which are sweet) and slice it into long thin strips.

  2. Step 2

    In a medium sauce pan on medium-low heat, add a tablespoon of olive oil or vegetable oil. Add the onion and stir frequently for 5-10 minutes, until they caramelize (they will become lightly golden brown).

  3. Step 3

    In another large pot, boil about 1/2 a gallon of water. Once the water comes to a boil and the onions caramelize, add them to the water. Reduce heat to medium.

  4. Step 4

    Add 3-4 vegetable broth cubes (more if you want stronger flavor). Add seasoning to taste (black pepper) - but you don't need much/any salt since there's plenty in the broth cubes.

  5. Step 5

    Lightly toast some slices of white bread. Pour the soup into bowls and add a slice of bread into each bowl. Top with gruyere cheese -- mozzarella will also work well. Place bowls into toaster or oven (bake at 350) for a few minutes to melt and brown the cheese.

  6. Step 6

    Bon Appetite! This makes about 4 servings.

Tips & Warnings
  • Use less onions if you don't want a strong onion flavor.
  • Be careful when taking bowls out of toaster/oven, since they will be very hot.
