The chuck wagon cook might seem to have a life of romance: cooking under the stars, traveling the frontier and finding adventure. But the chuck wagon cook worked hard under challenging conditions, and he was vital to the operation of a cattle drive. His skill and fortitude has been celebrated for over a century. To become a modern chuck wagon cook, follow these steps.

Instructions

Difficulty: Moderate

Step1
Learn to barbecue. Modern chuck wagon cooks usually prepare meat in either an open flame or underground pit. Both methods have their advantages, depending on the type of meat. Learn also how to barbecue with different woods. A chuck wagon cook must rely on what is available at the cooking location.
Step2
Be adept at cooking in cast iron. Cast-iron skillets, Dutch ovens and pots are standard issue for a chuck wagon cook. Their hardiness and even cooking over an open fire make them invaluable. Baking biscuits and desserts is a requirement for chuck wagon contests.
Step3
Develop personal recipes. All chuck wagon cooks have their specialty dishes, whether it's a unique dessert or a great biscuit. Cowboys and contest judges value a well-done dish.
Step4
Buy a chuck wagon. Many companies offer either vintage or modern chuck wagons for sale. Be sure that the chuck wagon is in good condition. If entering a contest, stock the chuck wagon with vintage items. Judging points are awarded for condition and historical accuracy of the chuck wagon.
Step5
Enter a contest or demonstration. Chuck wagon contests and demonstrations are held all across the U.S. Demonstrations may be as charity fundraisers or in conjunction with rodeos. The American Chuck Wagon Association lists contests on their website. Contests usually are judged on five food categories: meat, beans, potatoes, bread and dessert, as well the authenticity of the chuck wagon. Cash prizes usually are awarded for each category and an overall winner.

Tips & Warnings

  • If entering a contest, remember presentation can add points. Adding a unique feature, such as a dough brand or star to the top of a cobbler, can enhance the presentation and earn extra points.
