How to Can Apricots

      Dip apricots into very hot water, and then blanch them in cold water. This process will make it easier to remove the skins from the apricots.

      Treat the apricots for darkening. This can be done by placing them in water with an anti-darkening agent like Fruit-Fresh or lemon juice. You can also use vitamin C, but the flavor is not as good. Drain the apricots.

      Cook the apricots in syrup for 3 minutes. To make the syrup, combine 3 cups of sugar with 4 cups of water.

      Put the apricots into the can. Pour the hot syrup over the top of the apricots. Leave a 1/2-inch of space at the top of the can.

      Fill up the canner with enough water to cover the cans up to 1 inch over the top. Place the cans on the rack in the canner. Fully boil for 20 minutes.

      Take the cans out of the canner and cool them upright. Freeze you apricots if you are not going to use them within 2 days. They will last a lot longer.
