How to Make Vegan Creole Food

If you are looking for a new way to spice up your vegan cooking, this Creole Courtbouillion recipe can turn up the heat. Creole dishes, which have heavy European roots, uses fresh vegetables and rich sauces that suit the typical vegan menu.

Things You'll Need:

  • 2 lbs of tofu cut in cubes
  • 1 cup of vegetable broth
  • 2 tbsp. chili pepper flakes
  • 1/2 cup olive oil
  • 1 medium onion, minced
  • 3 cloves of garlic, minced
  • 1 medium bell pepper, minced
  • 2 stalks of celery, minced
  • 1 tbsp. of salt
  • 3/4 tbsp. of file powder
  • 1/4 tsp. cayenne
  • 2 bay leaves
  • 6 medium tomatoes, diced
  • 1/2 lemon
  • 1/4 cup of fresh parsley, minced
  1. Step 1

    Marinate tofu in mixture of chili peppers flakes, lemon juice and olive oil.

  2. Step 2

    Fry tofu in a nonstick pan until golden brown using 2 tbsp. of oil.

  3. Step 3

    Take tofu out of the pan and set aside. Now saute onions, garlic, bell pepper, celery and the spices in the remaining oil.

  4. Step 4

    Stir, lower the heat and simmer for 5 to 10 minutes, and then add the tomatoes and vegetable stock. Simmer for another 30 minutes on lowered heat.

  5. Step 5

    Add browned tofu, lemon and parsley and simmer 25 minutes until it looks like it is all blended well.

  6. Step 6

    Serve over hot brown rice or your favorite rice.

Tips & Warnings
  • File powder (pronounced fee-lay) refers to powdered sassafrass leaves and can be found at supermarkets in the speciality section or through online shopping.
  • Avoid adding the file powder with high heat. It acts as a thickener and the heat makes it sticky.
