How to Make a Kolache
Kolaches are an Eastern European dish that's edible in a few bites. Stuff this self-contained pastry with fruit, sausage or cheese, depending on whether you want a meal, a snack or a sweet. The basic kolache is the pastry -- what you put in the pastry defines what type of kolache you are making. Make a few to take on your next car ride or offer as a treat after a soccer match. Things You'll Need
- 2 envelopes dry yeast
- 1/4 cup lukewarm water
- 1 Tablespoon sugar
- 2 cups milk
- 1/2 cup, plus 1 Tablespoon butter
- 1/2 cup sugar
- 2 teaspoons salt
- 2 egg yolks, beaten
- 6 1/4 cups all-purpose flour
- Softened butter
- Small bowl
- Small sauce pan
- Large bowl
- Wooden spoon
- Mixer

Mix the yeast and water in a small bowl until dissolved. Keep the water cooler than 110 degrees F. Add 1 tablespoon of sugar and let stand for five minutes.

Heat the milk in a small sauce pan until scalded. Remove from heat and mix in the butter and sugar. Allow it to cool for five minutes. Add the salt and beaten egg yolks.

Combine the milk and yeast mixtures in a large bowl and stir well. Using a heavy mixer, slowly add the flour to the mixture.

Remove the dough from the mixer and place on a flat, floured surface. Begin kneading the dough until it begins to take a shiny or glossy appearance.

Place the dough in a well-oiled bowl and cover, letting it rise for 60 to 90 minutes.

Use a spoon to cut out egg-shaped pieces of the dough and roll them in the palm of your hand to make small round balls. Place them on a greased baking pan or cookie sheet approximately 1 inch apart. Brush the top of each ball with softened butter and allow to rise for another 45 minutes.

Wrap the sausage with the dough ball and seal the edges tightly with your fingers to make sausage kolaches. To make kolaches using other fillings, use two fingers to make a deep indentation in the dough, as deep as you can without penetrating the bottom. Fill the depression with your preferred filling, such as cheese or fruit.

Bake the kolaches at 425 degrees for 10 to 12 minutes or until golden brown. Allow them to cool for a few minutes, then serve right away.

Tips & Warnings
Be patient and allow the dough to rise. This works best if you can place the dough mixture in a warm place.
Placing a warm, moist towel over the bowl helps the dough mixture retain moisture and warmth while rising.
