How to Make an Anti-Cancer Salad

Build up your body's arsenal against cancer and other diseases by eating fresh, natural foods! The easiest way is to provide yourself with raw vegetables, especially those that have proven anti-cancer nutrients. Here is an easy salad that you can prepare, using some of the strongest power-foods you can get at the local grocery store. Make it taste great your way, by using your favorite dressing, or even better, make a fresh dressing out of olive oil (very nutritious) and vinegar, salt and pepper. Over time, you will begin to love and crave fresh salads like this one, as your body gets more of what it needs and wants!

Things You’ll Need:

  • Fresh Vegetables, as follows: (organic whenever possible, but if not, then rinsed with a vegetable wash)
  • Mixed Baby Greens OR Baby Spinach, whichever you prefer, or switch each time(organic bagged versions are readily available, but for the best nutrition, choose locally grown from a farmer's market)
  • Kale
  • Red Cabbage
  • Broccoli Sprouts
  • Dulse (comes bagged, in the Asian food section of your store, or omit if you cannot find it)
  • Fresh, organic tomatoes (heirloom versions taste fantastic!)
  • Your favorite salad dressing, preferably homemade and fresh OR olive oil and vinegar, with a few crushed garlic cloves mixed in
  • Salt and Pepper to taste

Step1
Start with your greens (mixed baby greens or spinach); prepare by rinsing using a salad spinner or colander, drain, and set aside in large bowl.
Step2
Remove about 3 large leaves each of both kale and red cabbage, and rinse well. Chop into narrow slices, and place into bowl on top of greens.
Step3
Chop tomato in half, then in half, and slice each quarter piece. Place into bowl.
Step4
Take out a few pieces of dulse from bag (save the rest in refrigerator for future salads). The easiest way to chop dulse is by cutting with kitchen scissors; snip into very small pieces (they will blend into the salad and have a very mild taste). Do this over the large salad bowl.
Step5
Take your broccoli sprouts, and tear small amounts from the carton (about 1/2 inch pieces). Use about half a standard-sized sprout carton. Sprouts will stick together, but just tear off like cotton candy and put the pieces into the salad bowl.
Step6
Pour dressing on top! If you are making your own, take a small bowl, and add 1/4 cup oil, a 2 Tablespoons of Raw Apple Cider (the most nutritious) or other Vinegar, salt, pepper, and two or three crushed garlic cloves; mix well and pour over the salad. Toss well, and enjoy!
Step7
To make this salad more appealing and customized to your liking, add your favorite vegetable(s), or sprinkle with croutons or cheese (goat cheese goes great with this). The important thing is to like eating these vegetables, raw, whenever you can!

Tips & Warnings

  • Eating a salad like this three times a week is a great way to stay healthy, and either lose or keep off weight!
  • Make this salad more filling by adding one sliced avocado.
  • Add some toasted whole-grain or sprouted bread topped with crushed garlic and olive oil for a more filling meal.
