Mix well--but not too well. When mixing the batter mix every ingredient together well, but don't over mix. The thinner your batter becomes the more likely you will have cookies that are too thin or do not rise.

Follow the baking directions. Every oven differs in heating and baking. Follow the instructions that are listed on the recipe, but know that these are just suggestions. Check the cookies a few minutes before the allotted cooking time to make sure they are not over baked. Also, leave the cookies in the oven a few minutes longer if they are still too soft or chewy.

Measure accurately and follow ingredients precisely. Cookbooks and recipes online tend to be tested before they are published. If it is a reputable pastry chef or resource you are following, have faith in their measurements.

Save time. When you bake cookies, save time by cleaning up as you go. A good way to save cleaning time is to put aluminum foil or waxed paper on your cookie sheets when baking. This way you can cool the cookies on the foil, keep using the baking sheet, and there's no mess to clean up.
