How to Make Peanut Butter Fudge

Classic peanut butter fudge requires no baking; you need just a few basic ingredients and kitchen tools you probably have on hand. Like with other fudge recipes, melting the ingredients together and dissolving the sugar before agitating it with a mixer helps create tiny crystals that give the fudge a creamy consistency. You can also use your microwave to prepare peanut butter fudge in a snap.

Basic Ingredients

  • Gather your ingredients, including either granulated or brown sugar, depending on your recipe. You also need milk, vanilla extract, butter and peanut butter; try using chunky peanut butter for crunchier fudge. Alternatively, you can melt peanut butter chips into the mix for a slightly different variation on the fudge.

    Simple kitchen tools such as a saucepan, measuring spoons and cups, a spoon for stirring and a heat-proof bowl to use with a stand mixer or a hand mixer are all you need. If you have one, a candy thermometer can be a handy tool for making classic fudge recipes.

    Line a baking pan with parchment or wax paper. After you cook the peanut butter fudge, you need to transfer it to a baking pan to cool. Lining the pan and allowing the paper to overlap the edges makes it simple to remove the fudge to slice and serve.

Classic Techniques

  • Add all of the ingredients except for the butter and the peanut butter to a large saucepan. Heat the mixture over medium heat, stirring just until the sugar dissolves. Then add the butter and cook the mixture to the soft-ball stage, which occurs at 235 to 240 degrees Fahrenheit. If you don't have a candy thermometer, you can test the syrup by dropping a small amount into a bowl of cold water. When it reaches the right temperature, it forms a soft ball as soon as it hits the water.

    Transfer the mixture to a heatproof bowl and allow it to cool for a few minutes. Beat the syrup on the mixer's medium speed, adding the peanut butter at this point. Continue mixing until the fudge gets slightly stiff and loses its glossy appearance.

    Pour or spoon the mixture into a prepared baking dish. Cover the dish and refrigerate it for one to two hours until the peanut butter fudge becomes firm. Take it out of the baking dish and cut it into serving pieces.

Microwave Method

  • Harness the power of your microwave to shave time off the preparation process. Put equal amounts of butter and peanut butter in a microwave-safe bowl. Microwave it for approximately 1 to 2 minutes to melt the butter. Stir to combine the two ingredients before adding half as much milk and nine times as much confectioner’s sugar as peanut butter. Microwave the mixture for another 1 to 2 minutes, stirring to combine all of the ingredients. Transfer the mixture to a prepared baking pan. Cover and chill the fudge until it's firm.

Flavor Variations

  • Stir solid ingredients into the mix before transferring it to the baking pan to cool and set. Examples include whole or chopped peanuts for added crunch. Create a classic flavor combination by stirring chocolate chips or crushed peanut butter cups into the fudge.

    Swirl liquid add-ins into the peanut butter fudge before chilling it. Some examples include chocolate syrup or fruit jam, which can be dragged through the peanut butter mixture with a knife or a toothpick to create a flavorful design.

    Layer peanut butter fudge with chocolate fudge or white chocolate fudge to create a peanut butter cup-like candy. Add the other fudge flavor to the baking pan and then top it with the peanut butter fudge before chilling. Once the mixture chills, it sets into a layered treat.
