How to Cook Stroganoff Roast Beef

This is an exciting alternative to your usual Sunday roast. You will wow your guests with this excitinly different Stroganoff Roast Beef

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 800g piece scotch
  • fillet, topside or eye fillet
  • 2 tbsp olive oil
  • 2 tsp sweet paprika
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • ½ cup beef stock
  • 250g button mushrooms, sliced
  • 1 red onion, cut into think wedges
  • 2 tbsp thyme leaves
  • ½ cup sour cream
  • Mashed potato and steamed green beans to serve

Step1
Preheat oven to 200oC. Brush beef with oil. Rub paprika and salt and freshly ground black pepper to taste all over surface of beef. Place in a large roasting pan. Roast for 20 minutes.
Step2
Combine tomato paste, sauce and stock in a bowl. Add mushrooms, onion and thyme. Stir to combine.
Step3
Meanwhile, add sour cream to mushrooms in pan. Stir until well combined.
Step4
Thinly slice beef across the grain and place onto plates. Spoon over mushroom sauce and serve with mashed potato and green beans.
