Step 1
Eat a generous meal prior to heading out. Many of the bars in Edinburgh date back centuries, especially in the Old Town. But even the more recent parts of Edinburgh such as the New Town have bars that date back to the Victorian and Edwardian era.

Try the Witchery by the Castle. The building itself dates back to 1470 and is said to be the most haunted restaurant in Britain. The Witchery serves fantastic award winning food and drink and also boasts a secret garden; a great way to start any night out in Edinburgh.

Step 3
Expect the bars to be sophisticated and up to date. Cocktail bars, wine cellars, hip bars and grungy student pubs can all be found in the centre of Edinburgh. Kick off your night out in Edinburgh's historic bars by checking out the happy hour spots. The drinks will either be half price or two for the price of one.

Step 4
Appreciate the music. Around 9pm, bars in the centre and surrounding areas of Edinburgh will have some form of live music to accompany the whiskey. Whether it is folk music, a local band or relaxing jazz you favour, check the advertising boards outside of bars for who is playing. Admission will normally be free of charge. Find a cozy bar and dance and drink the night away.

Enjoy a long night. A night out in Edinburgh's historic bars will usually end at around 11pm, but not always. Many bars are open later and during the festival in August, it is not hard to find a bar open until 1am. If you are very lucky you may even find a lock-in. A lock-in is where the doors are locked, after hours and a handful of invited guests are permitted to drink. All drinks are bought by the owner as it is illegal for customers to purchase drinks after hours.
