Herbs and spices are an amazing part of the food we eat. Steeped deeply into the roots of ethnic cooking, they have become a part of our everyday cooking.       Make a list of the dried herbs and spices that you know, love and use often.

      Find recipes you want to try and add the dried herbs and spices from these recipes to your list. If you are unfamiliar with any of them, research the unknown spice or herb before deciding if it is right for you or your family.

      List the following essential items, if they are not already on your list: garlic and onion (these could be in powder or dried form), kosher salt, pepper (whole peppercorns and a grinder are best), dried basil, oregano, parsley or a good Italian seasoning, bay leaves, cayenne and chili powder, and cinnamon and paprika.

      Consider these additional items that are great to have on hand for entertaining or specialty recipes: crushed red pepper, chervil, dry mustard, candied ginger, Kitchen Bouquet, liquid smoke, nutmeg, dried rosemary, dried sage, meat tenderizer and dried thyme.

  • Add any spices or herbs that are favorites or any ethnic items that you use often. Customize this basic list as you need for your individual kitchen.

  • Write the date you purchase a spice or dried herb on the cap. This makes it easier to know when to throw it out.

  • If you are unfamiliar with a spice or herb, follow the recipe you are using closely. Some of the Latin spices are quite spicy and can be alarming to someone not used to the heat.
