How to Make Corn Tortilla Chips

Store-bought and restaurant tortilla chips cannot hold a candle to fresh, homemade tortilla chips. Corn tortilla chips are quick and easy to make, and you can use them in any recipe calling for tortilla chips. Fry or bake some up and enjoy them plain, with salsa and dips, or in a batch of nachos.

Instructions

Things You'll Need:

  • 1 qt. oil for frying
  • 1 (12 oz.) package corn tortillas
  • Salt, to taste
  • Large pot
  • Slotted spoon
  • Cutting board
  • Knife
  • Bowl
  1. Step 1

    Cut tortillas into wedges or strips.

  2. Step 2

    Line a bowl with paper towels (to absorb excess oil).

  3. Step 3

    Heat oil in large pan to about 375 degrees.

  4. Step 4

    Drop tortillas in oil in small batches. Fry until golden.

  5. Step 5

    Remove chips from oil with slotted spoon. Transfer to bowl to cool.

  6. Step 6

    Sprinkle with salt while still warm.

  7. Step 7

    Repeat Steps 4 through 6 with remaining tortillas.

Tips & Warnings
  • For a baked version, cut tortillas, spread on the cookie sheet and bake in the oven at 350 degrees for 8 to 10 minutes. If desired, spray lightly with cooking spray prior to baking and sprinkle with salt while still warm.
  • Store tortilla chips in an airtight container or paper bag to maintain freshness.
  • Sprinkle warm chips with garlic powder, taco seasoning or other seasoning in addition to the salt for added flavor.
  • Exercise caution when handling heated oil.
  • Keep a close eye on the tortillas--they cook quickly.
  • Use a heat-safe slotted spoon. Some plastics may melt.

on 10/26/2009 I used to make these daily when I worked as a cook. It's really fast and easy. You're so right. They taste much better than store bought. You can also experiment with other seasonings than plain salt for extra punch.
