How to Make Vegetarian Stuffed Peppers

If you’re on the fence about becoming a vegetarian--this is one of those recipes that will assure you you’ll never have to eat meat again. In fact, it tastes so good, you wonder if meat would only ruin it. Here is a simple and delicious vegetarian take on the classic stuffed peppers.

Instructions

Things You'll Need:

  • 4 medium to large green, red or yellow peppers
  • 1 boil-in-bag (or equivalent) white rice
  • 1 large onion, chopped
  • 4 veggie burger patties
  • 2 16 oz. cans tomato sauce
  • 2 tbsp. vegetable oil
  • Large mixing bowl
  • Tablespoon
  • 4 qt. casserole dish
  • Aluminum foil
  1. Step 1

    Preheat oven to 375 degrees F.

  2. Step 2

    Cut peppers in half vertically and scoop out the seeds.

  3. Step 3

    Boil the rice according to directions on the package.

  4. Step 4

    Heat up veggie burgers in a skillet according to directions on the box.

  5. Step 5

    Chop up the cooked burgers finely.

  6. Step 6

    Place the burger, onion, rice and one full can of tomato sauce in the bowl and mix thoroughly.

  7. Step 7

    Coat the casserole dish with the vegetable oil.

  8. Step 8

    Set the pepper halves in the dish and stuff with the filling.

  9. Step 9

    Spread at least half of the remaining can of tomato sauce over the peppers. You can stick with half a can or use the whole can if you prefer it less dry.

  10. Step 10

    Cover with foil and bake for 30 minutes.

Tips & Warnings
  • You can use packaged veggie burger crumbles in place of chopping up veggie burgers, however Gardenburger's Flame Grilled patties chopped up are delicious in this recipe and taste better than any others I've tried. They are also vegan (contain no dairy products).
  • Cook longer than 30 minutes if you like the peppers a little softer.
  • You may never want to eat stuffed peppers with regular meat again.

on 11/24/2008 Very good idea, but you have to make them try the one that's all veggie. I really think you can win 'em over on this one, unless they're just determined not to like it or won't admit it.

on 10/5/2008 lol...my DH and I were just talking about this very thing. He's a hardcore meat-eater (i.e. meatHEAD!), and here's what we came up with:
1/2 meat, 1/2 meat sub, so we're both satisfied. That's also good for people "in the process" of switching to vegetarianism...OR you could split the recipe and cook some with meat and some without...just remember which ones are veg only!
