Instructions

Things You'll Need:

  • 1 Cup of Chopped Walnuts
  • 1 1/2 Cups of Shredded Zucchini
  • 1/2 Cup of Vegetable Oil
  • 1 Cup of Granulated Sugar
  • 2 Large Eggs, Lightly Beaten
  • 2 Teaspoons of Vanilla
  • 1/2 Teaspoon of Baking Soda
  • 1/2 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon of Salt
  • 1/4 Teaspoon of Baking Powder
  • 1 1/2 Cups of All Purpose Flour
  • 2 Mixing Bowls
  • Elextric Mixer
  • Measuring Cups and Spoons
  • Oven Preheated to 350 Degrees F
  • Bread Pan
  • Cheese Grater
  1. Step 1

    Preheat oven to 350 degrees F. In one mixing bowl crack open your 2 large eggs and slightly beat them. In other mixing bowl combine 1/2 cup of vegetable oil, 1 cup of sugar, 2 large eggs, 2 teaspoons of vanilla, 1/2 teaspoon of baking soda, 1/2 teaspoon of ground cinnamon, 1/2 teaspoon of salt, and 1/4 teaspoon of baking powder.

  2. Step 2

    With your electric mixer, on medium speed, mix your ingredients until all are blended or for 30 seconds. Using a cheese grater, shred one medium size zucchini.

  3. Step 3

    Add 1 1/2 cups of all purpose flour and mix until moistened. Stir in 1 cup of chopped walnuts (optional) and 1 1/2 cups of shredded zucchini. Pour batter into a greased and floured loaf pan. Bake for about 65 - 75 minutes or until a fork comes out clean when inserted.

Tips & Warnings
  • Don't over cook you bread. It is not good when it gets hard.

on 4/25/2008 PS I forgot to add that I sprinkle the tops of the loaves with crunchy style brown sugar just gbefore baking. Tasty topping.
