      Get a clean, dry glass. Don't use glasses stored in the freezer; that works well with other beers, but will cause problems with head retention and possibly let ice water dilute the beer.

      Hold the glass at 45 degrees to the tap. If pouring from a can or bottle, the same thing applies. This lets the Guinness flow smoothly down the side of the glass, rather than cascading down.

      Stop when the glass is about 3/4 full. Set the glass down and wait; this will allow the gas to bubble through the beer.

      When the bubbling has settled down, hold the glass at 45 degrees again, and finish pouring. The head should barely crest the lip of the glass.
