How to Make Cheese Squash Casserole

Things You'll Need
- Sauce pan
- Water
- 2 lbs. summer squash
- Bowl
- 2 eggs
- 1 can new potatoes, sliced
- 1 tbsp. butter
- 1 medium onion
- 1 tbsp. sugar
- 1 tsp. ground sage
- 1/2 tsp. paprika
- Casserole dish
- 1 package crackers
- Salt and pepper

Boil water in a sauce pan.

Preheat the oven to 350 degrees.

Put squash in the pan and cook in the oven until tender.

Beat the eggs until the yokes and whites are blended.

Melt the butter in the microwave or on the stove.

Drain the can of potatoes.

Cut the onion into small pieces.

Mix the butter, squash, eggs, potatoes, 1/2 cup of cheese and sage in a large bowl.

Grease the casserole dish with cooking spray, butter or vegetable oil. Pour the cheese and squash mixture into the dish.

Crush the crackers into fine crumbs.

Sprinkle the rest of the cheese and the crackers on top of the casserole.

Place in the oven and cook for 25 minutes.

Dust the cheesy squash casserole with paprika and serve.
