How to Make Banana Pancakes

This recipe for banana pancakes is not only relatively quick and tasty, but makes for a healthy breakfast treat as well. Use up those browning bananas--throw them into your pancakes, not the trashcan. This recipe is sure to be a crowd and kid pleaser. Preparation and cooking time is 15 minutes. Makes 8 to 10 4-inch pancakes.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 cup brown rice flour
  • 2 tbsp. honey
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 egg
  • 1 cup rice or soy milk
  • 2 to 3 ripe bananas
  • Griddle or heavy skillet
  • 2 mixing bowls
  • Mixing spoon
  • 1/4 cup measuring cup
  • Serving plate
  • Spatula
  • 2 tbsp. oil

Step1
Mix together flour, sugar, baking powder and salt in large mixing bowl. Make a well in the center.
Step2
Beat egg, oil and milk together in second mixing bowl.
Step3
Pour egg mixture into center of dry mixture and stir. (Batter should not be lumpy.)
Step4
Mash bananas and add them to the batter.
Step5
Grease griddle or skillet and warm over medium heat.
Step6
Pour 1/4 cup batter onto griddle and cook for about 2 minutes on each side, or until pancakes are golden brown.
Step7
Transfer pancakes to plate and serve.

Tips & Warnings

  • Substitute 2 egg whites for 1 egg.
  • For added variety, try adding 1/4 cup nuts or 1/2 cup shredded coconut to the original recipe.
  • Serve with butter, syrup or even peanut butter.
  • This pancake recipe is a fantastic way to use over-ripe bananas.
