How to Make Chile Verde

Chile verde, or green chili, is a hearty, healthy meal. Serve it alone, or as a side with other entrées. This particular chile verde recipe is vegetarian friendly. Preparation time: 15 minutes. Cook time: 30 minutes. Yield: 3 cups.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 3 tbsp. olive oil
  • 1 onion, chopped
  • 3 cloves garlic - minced
  • 1/2 tsp. ground cumin
  • Salt
  • 12 green chiles
  • 1 3/4 cup water
  • Large pot
  • Cutting board
  • Knife
  • Measuring spoons and cups
  • Mixing spoon
  • Ladle
  • Serving bowls
  • Blender

Step1
Prepare the chiles by roasting or broiling, peeling, seeding and chopping. In the case of frozen chiles, chop and then defrost.
Step2
Heat the olive oil in pot over medium heat. Sauté the onion and garlic until soft and translucent.
Step3
Add the remaining ingredients and bring to a boil over high heat.
Step4
Reduce the heat and simmer for 30 minutes.
Step5
Remove from heat and serve.

Tips & Warnings

  • Add cooked pork or chicken to the above recipe prior to simmering.
  • Add more vegetables, if desired, such as tomatoes, corn, jalapeños or bell peppers.
  • For a smooth chile sauce, remove from chile from heat, cool and puree in blender.
  • Chile verde is a fantastic use for fresh chiles, and it freezes well!
  • Handle green chiles with care. Do not rub eyes or other sensitive areas until you have washed thoroughly. You may wish to wear gloves.
