Leading a vegan lifestyle doesn't mean that you must give up the pleasures of eating or have to eat only dull and tasteless foods. A delightfully rich and chocolaty brownie recipe can be so seamlessly modified for vegans that your non-vegan friends and family will never know the difference.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1/3 cup flour
  • 2/3 cup cold water
  • 12 oz extra firm tofu
  • 1 cup semi-sweet chocolate chips
  • 1 3/4 cups sugar
  • 3/4 tsp. salt
  • 2 tsp. vanilla
  • 1/2 cup vegetable oil
  • 3/4 cup unsweetened baking cocoa
  • 1 1/2 cups flour
  • 3/4 tsp. baking powder
  1. Step 1

Preheat the oven to 350 degrees.

  2. Step 2

Puree the tofu, flour and water in blender or food processor until the mixture is smooth and creamy.

  3. Step 3

Pour the mixture into a sauce pan and cook over low heat for about ten minutes. Stir the constantly until the batter thickens. If it begins to boil, turn the heat down.

  4. Step 4

Remove the mixture from the heat and stir in the chocolate chips, vanilla, sugar, and salt. Stir the mixture until the chocolate is completely melted, then set it aside to cool.

  5. Step 5

Mix in the oil after the mixture has completely cooled.

  6. Step 6

Sift the dry ingredients together, and slowly fold into tofu mixture until smooth.

  7. Step 7

Spread the brownie mixture in a greased baking pan and bake for 35 to 40 minutes. Cool the brownies on a wire rack and cut them into bars.

Tips & Warnings
  • Over-baking the brownies will make them dry instead of chewy. They are done when a knife or toothpick inserted into the center, comes out clean.
  • For variety, try using white chocolate or peanut butter chips instead of semi-sweet chocolate chips.
