How to Make a Hen and Sausage Gumbo

Hen and sausage gumbo is one of the staple dishes of Cajun eating. Known throughout New Orleans and much of Louisiana, the dish is tasty and complex, yet surprisingly simple to prepare. Follow these steps to serve up a spicy dish of Cajun gumbo goodness.

Things You'll Need:

  • 1 5-lb. stewing hen
  • 1 lb. sausage
  • 1 cup cooking oil
  • 1 1/2 cups flour
  • 2 cups chopped celery
  • 2 cups chopped onion
  • 1 cup chopped bell pepper
  • 3 qts. chicken stock
  • Bay leaves
  • Pepper
  • Chopped green onions
  1. Step 1

    Prepare the meats. Cut the stewing hen into 8 to 10 serving-size pieces, removing as much of the fat as possible. Cut the sausage into half-inch-thick slices. Set both meats aside.

  2. Step 2

    Heat one cup of cooking oil over medium-high heat. Whisk in the flour. Stir the mixture for a few minutes until the flour is incorporated.

  3. Step 3

    Stir 2 cups of celery, 2 cups of onion and 1 cup of bell pepper into the hot oil. Stir the vegetables until they begin to wilt.

  4. Step 4

    Add the hen and sausage into the gumbo, being careful of spray from the oil. Stir the mixture of hen, sausage and vegetables. Cook for about 15 minutes.

  5. Step 5

    Begin adding chicken stock to the gumbo, one ladle at a time and stirring after each addition. When all 3 quarts of stock have been incorporated, bring the gumbo to a boil and let it simmer for 1 hour.

  6. Step 6

    Season to taste with bay leaves, pepper and green onions. The gumbo might need some more cooking, so let it simmer for another hour or two.
