Begin planning your menu several weeks before Easter. Your dinner should include a main dish, perhaps turkey or ham, potatoes, two or three vegetables, salad, bread and dessert.

Get a headcount of how many people will be coming for Easter dinner. Call your guests and confirm one week in advance so that you can play accordingly.

Figure out how much meat or poultry you need to buy. If you are cooking a whole turkey or bone-in ham, allow for one pound per person. If you are cooking boneless meats, 1/2 pound per person is sufficient.

Go grocery shopping three or four days before Easter. If you shop earlier, some of your perishable items may spoil. If you shop later, you can be rushed and frenzied.

Dye eggs a few days before Easter. Enlist your kids or neighbors' kids to help with the project.

Write the name of each guest on the eggs. When setting the table on Easter day, put the eggs next to each plate to serve as place cards.
