How to Make Strawberry Bread

After a relaxing afternoon of picking and probably eating a few fresh strawberries, one of the best ways to use those strawberries is by following this simple family recipe for strawberry bread. This bread can be served warm out of the oven, wrapped up as a gift or used in French toast the next morning, all with minimal effort.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 3 to 4 cups whole fresh strawberries
  • 2 cups sugar
  • 4 eggs
  • 1 1/4 cup oil
  • 3 cups flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup chopped nuts
  • Food processor
  • Oven
  • 2 9x5 loaf pans
  • Fork or whisk
  • 2 mixing bowls
  • Toothpick

Step1
Preheat oven to 350 degrees.
Step2
Grease 2 loaf pans and set aside.
Step3
Chop strawberries in a food processor with half a cup of sugar. Do not overchop them, you want all the pieces to be about the same size, but not pureed.
Step4
Combine the chopped berries and sugar mixture with the eggs and oil. Use a whisk or a fork for this since you don't want to beat the strawberries.
Step5
Mix the dry ingredients in a separate bowl; the remaining cup and a half of sugar, the flour, the cinnamon, the baking soda, the salt and the chopped nuts.
Step6
Add the wet ingredients to the dry ingredients and combine with a fork just until blended.
Step7
Divide the batter between the two pans and bake for an hour in a preheated oven. The bread is done when it is golden brown on top and a toothpick pulls out clean.

Tips & Warnings

  • Place the oven rack so that the top of the bread pan will sit in the center of the oven.
