How to Make Frozen Custard

Frozen custard has become a popular substitute for ice cream. The delicious treat can be made at home easily, no matter what recipe or flavor you choose. Follow these easy steps, and you'll soon be enjoying your own homemade frozen custard. Does this Spark an idea?

  • Whipped cream (optional)
  • 4 cups milk
  • 1/3 cup cornstarch (optional)
  • 4 eggs
  • 1 1/4 cups sugar
  • 1/8 tsp. salt
  • 1 can (14 oz.) sweetened condensed milk

      Assemble the ingredients. It's never a good idea to get halfway into a recipe to discover you don't have something on hand.

      Gather the utensils and pans you will need. Most recipes call for a heavy saucepan or a double boiler. You will be heating milk products, and they scorch easily. Make sure the pan is big enough to hold all the ingredients.

      Make the whipped cream. (This is optional.) Set the whipped cream back in the refrigerator.

      Heat the milk over low heat. Stir the milk to keep it from sticking to the bottom of the pan. Some other recipes call for a thickening agent such as cornstarch to be added during this phase of cooking as well.

      Mix the eggs and sugar while you are heating the milk. When the milk is at the required temperature of at least 160 degrees, gradually pour about half of the hot milk into the egg mixture. Stir well as you go. This will prevent the eggs from curdling and will give you a smooth custard. Return the entire mixture to the saucepan used to heat the milk.

      Continue heating the egg, sugar and milk mixture. Then remove from heat, and add the remaining ingredients.

      Cool mixture in the refrigerator for a few hours. Then you can freeze it-most recipes suggest using metal ice-cube trays, pans or an electric ice cream freezer to complete your homemade frozen custard.

Tips & Warnings

  • Do not hurry and turn up the heat when making the custard. You'll scorch the milk.
