How to Make Norwegian Fattigmann

Norwegian Fattigmann are also known as "poor mans cookies" and are a traditional Christmas treat. Made from an egg-rich soft dough, they are deep-fried quickly. These delicious cookies can be habit-forming.

Instructions

Things You'll Need:

  • 5 Egg yolks
  • 1 Egg white
  • 1/3 Cup sugar
  • 1/2 Cup thick cream
  • 1/4 Teaspoon ground cardamom
  • 1/8 Teaspoon salt
  • Flour to make a soft dough, approximately 1 to 2 cups
  • Powdered sugar
  • Deep fat, preferably lard
  • Deep fryer or a deep heavy cast iron skillet
  • Brown paper or absorbent paper to drain
  1. Step 1

    Beat eggs well then add sugar. Mix eggs and sugar together thoroughly.

  2. Step 2

    Add cream, cardamom and salt to mixture and mix well.

  3. Step 3

    Slowly add only enough flour to make a soft dough. Too much flour will make cookies tough.

  4. Step 4

    Dust the rolling surface with a mixture of flour and sugar; keep sugar and flour nearby for rolling out cookies.

  5. Step 5

    Roll dough thinly and cut into diamond shapes, approximately 2 inches by 2 inches.

  6. Step 6

    Cut a small slit in the middle of each fattigmann.

  7. Step 7

    Draw one corner of the cookie through the slot, making a semi-knot.

  8. Step 8

    Fry in hot deep fat until barely browned; these cookies are very light colored when done.

  9. Step 9

    Drain on absorbent paper until cool.

  10. Step 10

    Sprinkle with powdered sugar for a finishing touch.

Tips & Warnings
  • Vegetable shortening can be substituted for lard, but the cookies are tastier with lard.
  • Brown paper grocery bags are great to use for absorbing the grease.
  • Dough can be refrigerated if wrapped in waxed paper.
  • Do not overcrowd the cookies in the hot fat or they will take longer to fry.
  • Never leave the hot fat unattended.
