You can use aioli to add flavor and punch to traditional foods, giving them an entirely new take. Here's a recipe that will excite your taste buds.

From Quick Guide: Condiments
Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Eggs
  • Extra virgin olive oil
  • Garlic clove
  • Salt
  • Pepper
  • Fresh lemon juice
  • Rubber spatula
  1. Step 1

Toss 6 garlic cloves into the blender or food processor. Add 1 egg and blend for 3 to 5 seconds using the pulse button.

  2. Step 2

Slowly pour 1/4 cup of olive oil into a low running blender. Add 1 tablespoon of lemon juice.

  3. Step 3

Pour another half-cup of the olive oil into the blender. Process the mixture until it becomes thick and emulsifies. You have essentially made mayonnaise, but by adding flavor to it, you've created aioli.

  4. Step 4

Scoop the aioli into a dish with a rubber spatula.

  5. Step 5

Add salt and pepper to taste and any other seasonings you would like. You can make aioli with any combination of seasonings, including cayenne, cumin, coriander, Dijon mustard or thyme.

  6. Step 6

Cover the aioli, and place in the fridge. Chill for a minimum of one-half hour.

Tips & Warnings
  • Try balsamic vinegar as a flavoring. This goes well with poultry and vegetables.
  • Use pre-made mayonnaise, and then add the ingredients to the mayo without using the blender.
  • Allow your aioli time to chill and sit. The longer you wait, the more powerful the flavors will become.
