How to Make Spinach Madeleine

Spinach Madeleine is a Cajun vegetable casserole. This recipe takes less than 1 hour to prepare and cook and is a spicy way to enjoy your spinach.

Things You'll Need:

  • Bread crumbs
  • 2 cups slivered almonds
  • 2 cups shredded cheese
  • 2 packages frozen, chopped spinach
  • 1/2 tsp. black pepper
  • 4 tbls. butter
  • 3/4 tsp. celery salt
  • 2 tbsp.. flour
  • 3/4 tsp. garlic salt
  • 1 onion
  • 6 ounces red jalapeno cheese
  • 1/2 cup evaporated milk
  • 1 tsp. hot sauce
  • 1/2 cup vegetable liquor
  • Dash red pepper
  • Dash salt
  • Sauce pan
  • Bowl
  • Casserole dish
  1. Step 1

    Cook spinach in a sauce pan according to the directions on the package.

  2. Step 2

    Drain the spinach into a bowl. Keep the liquid that was drained.

  3. Step 3

    Melt the butter in a pan over low heat. Add the flour and mix until smooth, but not brown.

  4. Step 4

    Chop the onion and add it to the flour mixture.

  5. Step 5

    Cook onions until they are soft.

  6. Step 6

    Add the evaporated milk and vegetable liquor to the mix. Pour in the drained spinach liquid, stirring constantly.

  7. Step 7

    Cut the jalapeno cheese into small cubes and add to the mix.

  8. Step 8

    Add the spices, hot sauce and cheese. Stir until the cheese is melted and creamy.

  9. Step 9

    Put the cooked spinach into the mixture and stir until all of the ingredients are combined.

  10. Step 10

    Grease a casserole dish. Pour the Spinach Madeleine into the dish.

  11. Step 11

    Spread the bread crumbs over the top of the dish.

  12. Step 12

    Sprinkle the cheese and almonds over the dish and serve hot.

Tips & Warnings
  • This Spinach Madeleine recipe yields 5 to 6 servings.
  • Add 1 cup of rice to the recipe for variety.
