Scalloped succotash is succotash with a creamy sauce and a bread crumb topping. It is a dish rich in vitamins and nutrients. You can experience this tasty meal with this easy-to-make recipe.

Things You'll Need:

  • 1 can creamed corn
  • 1 red bell pepper
  • 1 can green beans
  • 1 egg
  • 1 cup milk
  • 1 1/2 cup cracker crumbs
  • 1 small onion, chopped
  • 1/2 tsp. salt
  • Dash black pepper
  • 1/4 cup butter, melted
  • 1/3 cup pimientos
  • 1 cup Swiss cheese, shredded
  • 1 tsp. Tabasco or hot sauce
  • 2 slices bacon
  • Casserole dish

  1. Step 1

    Preheat the oven to 350 degrees.

  2. Step 2

    Slice the bell pepper into long strips.

  3. Step 3

    Tear the bacon into small pieces, 1 to 2 inches long.

  4. Step 4

    Drain the green beans.

  5. Step 5

    Mix the corn, beans, egg, cheese, milk, onion and Tabasco sauce in a bowl.

    Add the pimento, bacon, bell pepper, salt and pepper. Stir to combine.

    Grease the casserole dish. Pour the succotash into the dish.

    Mix the cracker crumbs with the butter in a bowl.

    Spread the crumb mix over the top of the scalloped succotash.

    Bake the dish in a 350-degree oven for 30 minutes or until the top is a golden brown.
