How to Make an El Paso Casserole

El Paso casserole is an American recipe with a Mexican flare. The spices, beef and soups combine with tortilla chips and other ingredients to make a crunchy, tasty dish. You can experience the taste of El Paso without leaving home with this recipe.

Difficulty: Moderately Easy

Things You’ll Need:

  • 1 cup uncooked sliced mushrooms
  • 1 onion
  • 1 1/2 lbs. ground beef
  • 1 can cream of mushroom soup
  • 1 can chicken and rice soup
  • 2 4-ounce cans taco sauce
  • 1/2 can chili peppers
  • 2 garlic cloves
  • 8 ounces tomato sauce
  • 1 cup uncooked, sliced mushrooms
  • Bag of nacho-flavored tortilla chips
  • 1 small bag grated cheese
  • Skillet
  • Casserole dish

Step1
Preheat the oven to 325 degrees.
Step2
Chop the onion into small cubes.
Step3
Brown the beef, onion and mushrooms in a frying pan over medium heat.
Step4
Drain the grease from the meat.
Step5
Turn the stove to medium heat. Add the cream of mushroom soup and the chicken and rice soup. Stir the mixture until blended.

Add the taco sauce and chili pepper.
Step7
Cook for 20 minutes, stirring continuously.

Pour the mix in to a bowl. Add garlic and stir.
Step9
Grease a casserole dish. Put a layer of nacho-flavored tortilla chips on the bottom of the dish.
Step10
Pour the meaty mixture over the chips. Sprinkle cheese on top of the casserole. Place another row of nacho-flavored tortilla chips on the top.
Step11
Bake in the oven for 30 minutes at 350 degrees.

Tips & Warnings

  • This recipe yeilds 8 to 10 servings.
  • Serve the El Paso casserole over a bed of rice.
