  • Fat free sour cream
  • Chives

      Wash your potato thoroughly. Be sure to remove all dirt and eyes.

      Puncture your potato with a fork or knife several times. If you don't puncture the potato, it can explode in the microwave.

      Microwave your potato for 8 to 10 minutes on high.

      Finely chop 2 to 3 chives.

      Slice the cooked potato in half. Then pop it in the toaster oven and set your toaster oven to "dark toast" or "heavy toast." Most potatoes take over an hour baking in the oven. This will give you a crispy baked potato in less than 15 minutes.

      Remove the potato from the oven when the skin is crisp. Then add a healthy dollop of fat-free sour cream and spoon your chives on top.

  • You can "twice bake" this potato easily. Once the potato has been microwaved, scoop out the center after slicing and mix the inside of the potato with your sour cream and chives. Place the contents back into the potato skin and toast to get a crisp skin.
