How to Make a Bacon Cheddar Potato

The Bacon Cheddar Potato is a perfect combination of mouthwatering flavors. And if you use low-fat cheddar with low-fat, low sodium bacon, it isn't unhealthy. Of course you can just pile on the good stuff. Here's a quick and easy recipe for a Bacon Cheddar Potato.

Things You'll Need:

  • 1 large potato
  • 1 strip of bacon
  • 2 oz. of cheddar cheese
  • Microwave
  • Toaster oven
  1. Step 1

    Wash and clean your potato. Use a vegetable brush to get rid of any dirt. Also remove any eyes that have formed on the potato skin.

  2. Step 2

    Puncture your potato with a fork or knife in several places. If you don't, your potato will explode in the microwave.

  3. Step 3

    Microwave your potato on high for 8 to 10 minutes. Your potato will be done when you can easily stick a fork or knife through the skin.

  4. Step 4

    Slice your potato in half and scoop out the insides. Place the insides of the potato in a bowl.

  5. Step 5

    Microwave a slice of bacon for 45 seconds on a paper towel.

  6. Step 6

    Add your cheddar cheese to the potato.

  7. Step 7

    Remove the bacon from the microwave, let it cool for a minute and then chop it into bacon bits.

  8. Step 8

    Add the bacon to the potato and cheddar. Stir with a spoon until well mixed. Stuff the mixture into the skin of the potato.

  9. Step 9

    Set your toaster oven to "toast" and cook the potato for five minutes or until the skin begins to crisp. Remove the potato, let cool for a minute and serve.

Tips & Warnings
  • You may also add some chopped chives and a dollop of sour cream. Use low-fat sour cream with other low-fat ingredients for a healthy, low-caloris recipe.
