Buy seed potatoes or organic potatoes. This is important, as many potatoes bought from the actual grocery store will have chemicals on them, which will greatly affect your success rate when it comes to growing potatoes. Your local nursery should have seed potatoes in stock. If not, buying organic is the next best thing.

Place the seed potatoes in direct sunlight. You are looking to find a spot where the temperature will be between 65 and 75 degrees Farenheit. Place them "rose-end" up, meaning the side with the most eyes.

Leave potatoes in the sun for five to seven days or until the eyes begin to sprout.

Remove all but three eyes from your potato by washing gently.

Plant your potatoes in the ground. It is that simple.

Tips & Warnings
If you have large potatoes, you may quarter them. Then leave them out for three days so that the exposed skin forms a callous. Then continue to chit as instructed.
If you need to plant potatoes immediately, dip them in lime, wood ash or sulfur. This will act as a desiccant.
