How to Make Sausage Rice Jambalaya

Jambalaya has been a staple in southern Louisiana since the 1700s. People took whatever foods they had available and cooked it in a single pot. For many people, it was the only cooking pot they had. Today, many different versions of jambalaya are available to make, including sausage rice jambalaya.

Instructions

Things You'll Need:

  • 1/2 tsp. black pepper
  • 3 large yellow onions, chopped
  • 1/2 cup chopped celery
  • Measuring spoons
  • Large pot and lid
  • 1 tbsp. salt
  • 1 tbsp. Louisiana hot sauce
  • 2 tbsp. butter
  • 3 cups water
  • 1/2 cup chopped green bell pepper
  • Measuring cup
  • 5 large garlic cloves, minced
  • 1 cup chopped green onions
  • 3 cups chicken broth
  • 1 tsp. Cayenne pepper
  • 3 cups uncooked rice
  • 3 lbs. andouille sausage (use a spicy sausage if andouille is not available in your area)

    Make Sausage Rice Jambalaya

  1. Step 1

    Cut the sausage into pieces approximately 1/4 inch thick.

  2. Step 2

    Cook the sausage in the pot until thoroughly done.

  3. Step 3

    Leave the grease from the sausage in the pot and add the onions to the pot to cook until translucent.

  4. Step 4

    Add the water, chicken broth, salt, minced garlic, chopped green onions, chopped green bell pepper, chopped celery, black pepper, Cayenne pepper, Louisiana hot sauce and butter to the pot.

  5. Step 5

    Add the sausage and bring the pot to a boil.

  6. Step 6

    Put the rice into the boiling pot.

  7. Step 7

    Simmer the contents of the pot for 15 minutes without stirring.

  8. Step 8

    Turn over the rice to mix the contents of the pot together. Cover the pot with the lid.

  9. Step 9

    Check the rice after 15 more minutes. If rice is done, let the pot stand for 10 minutes and then serve the sausage rice jambalaya. If rice is not done, turn the rice and check it in another 5 minutes.

Tips & Warnings
  • Serve garlic bread with the sausage rice jambalaya as a great side item and to cool down the spiciness.
  • Make Tony Chachere's seasoning available for those who want to spice up their plates of jambalaya.
  • Add chopped tomatoes to provide additional flavor. The tomatoes should be added at the same time the other vegetables are added to the pot.
  • Replace the sausage with shrimp, chicken or other meat to change the flavor.
  • Make sure you carefully turn over the rice in the jambalaya so you don't break the rice.
  • When you turn the rice, make sure you get all of the rice from the bottom of the pot to thoroughly mix the contents and keep the rice from sticking.
