How to Make Okra Gumbo for Kwanzaa

Kwanzaa celebrates the fruits of the season, and there is no better representation of that idea than a nice big pot of gumbo. The word gumbo is derived from the African word for okra, and okra is one of the main ingredients in this hearty soup. Most people wait for special occasions, such as Kwanzaa, to enjoy this soup, but feel free to treat yourself throughout the year.

Instructions

Things You'll Need:

  • 8 cups of sliced okra
  • Juice of half a lemon
  • 1 tsp. of salt, or to taste
  • 3 tsp. of ketchup
  • 1/2 tsp. of pepper, or to taste
  • 1 tsp. of paprika
  • 1 minced clove of garlic
  • 1 1/2 sticks of butter
  • 2 tbsp. of dried parsley
  • 1 tsp. of Worcestershire sauce
  • 7 cups of peeled, seeded and chopped tomatoes
  • 3 cups of onions chopped in small pieces

    Make Okra Gumbo for Kwanzaa

  1. Step 1

    Melt 4 tbsp. of butter in a large cast iron skillet or Dutch oven.

  2. Step 2

    Sauté the onion and garlic in the butter until is has turned a golden color. This will usually take about 5 minutes.

  3. Step 3

    Remove the garlic and onions from the pot (making sure to drain excess butter), and set aside on a plate.

  4. Step 4

    Add the remaining butter to the pot and make sure it is melted. Then, add the okra and simmer for about 10 minutes, making sure to stir it often. Make sure you take the full time with this step or you will wind up with slimy okra which can ruin your gumbo.

  5. Step 5

    Put the tomatoes, parsley, paprika, Worcestershire sauce, ketchup, salt and pepper, lemon and sugar in the okra mixture and mix through.

  6. Step 6

    Cover the pot and simmer on medium-low heat for about 30 to 40 minutes, stirring to make sure gumbo does not stick to the pot.

  7. Step 7

    Serve your gumbo over hot rice or alone in a nice big bowl.

Tips & Warnings
  • Gumbo can be made in advance of your Kwanzaa meal and then reheated. It is always better after the spices have had a chance to flavor the soup.
  • Feel free to add crab legs, sausage, chicken or shrimp when you make your gumbo for variety. If you do, cook crab, sausage and chicken before combining the ingredients, but wait until just before serving to add shrimp, which cook quickly.
