The herb crust (Bread crumbs, coriander, thyme, lots of parsley and parmesan cheese)

After scoring the fat, seasoning the lamb with salt and pepper, I seared the outside of the lamb in my new pans! The back pan has my mini dutch potatoes being cooked.

After searing the lamb gets put into the oven at 400 degrees for about 7 to 8 minutes.

Then the lamb is smeared with Dijon mustard and then coated in the herb crust. I was not 100% sure if i would like the mustard so i did 1/2 with and 1/2 without mustard. I did prefer the ones with the mustard in the end.
