How to Make Sun Dried Tomato Butter

Things You'll Need
- 2 sticks unsalted butter
- 3 tbsp. fresh parsley
- 1 1/2 teaspoons minced garlic
- 1 oz. sun dried tomatoes.

Remove butter from fridge and allow it to soften for about 30 minutes.

Chop your parsley finely until you produce 3 tbsp.

Mince your garlic finely. You may do this in a small food processor.

Finely chop your sun dried tomatoes. The finer you can get them the better, as you want them to blend into the butter without any pieces sticking out. Use a food processor to chop them extra fine.

Combine all ingredients in a bowl and mix with a hand mixer or spatula until well combined. Chill for an hour and serve.

This butter can keep about 10 days in the fridge. If you have extra, freeze it. It will stay good for 2 months.
