How to Make Banana Chocolate Chip Muffins

Banana and chocolate, the combination tempts even the most jaded taste buds. Enjoy several of these reduced fat mini-muffins; the effect on your waistline will be small, but the effect on your taste buds will keep you smiling all day.

Instructions

Things You'll Need:

  • Mini-muffin baking pan
  • Non-stick cooking spray
  • Measuring spoons and cups
  • 1 ½ cup cake flour
  • ¾ cup sugar substitute
  • 1 ½ tsp. baking soda
  • 3 ½ ripe bananas
  • 3 tbsp. buttermilk
  • 1/4 cup light butter ( salted)
  • 1 large egg, room temperature
  • ½ cup semisweet chocolate chips
  • Sifter
  • 2 large bowls
  • Small microwave safe bowl
  • Whisk
  • Mixing spoon
  • Toothpicks
  • Cooling rack
  1. Step 1

    Preheat oven to 350 degrees Fahrenheit. Generously coat mini-muffin pan with cooking spray.

  2. Step 2

    Sift flour, sugar and baking soda in large bowl. Set aside.

  3. Step 3

    Melt the butter in microwave using a microwave safe bowl. Butter will melt in less than a minute in most microwaves.

  4. Step 4

    Mash the bananas in a clean bowl with a whisk. Mix melted butter, egg and buttermilk with the mashed banana.

  5. Step 5

    Combine flour mixture with the banana mixture. Stir batter gently, stopping when the flour has been incorporated into the banana mixture. Stir in the chocolate chips.

    Fill the muffin pan with batter. Batter should almost reach the top of each mini muffin holder.

  7. Step 7

    Bake for 19-22 minutes. Check mini-muffins with a toothpick. The tooth pick should come out cleanly when the muffins are done. Empty muffins onto cooling rack immediately.

Tips & Warnings
  • Raisins or other chocolate substitute can be used to further reduce calories.
  • Buttermilk substitution is as follows: Pour 1 tbsp. cider vinegar into 2 cup measuring cup. Fill measuring cup with low-fat milk until the mixture equals 1 cup. Let stand for 5 minutes. Substitute 3 tbsp. of this mixture for buttermilk.
  • Cooking time varies with each oven. Muffins should be golden brown. Even overcooked, these muffins are delightful.
  • Do not use over ripe bananas. The muffins become slimy in appearance and are not as visually appealing. If your bananas are extremely ripe, reduce the amount of banana used to 2 1/2 bananas.
  • Cake flour can be found in the baking aisle. It is finer then regular flour and in this recipe compensates for the low fat butter.
  • Check to see if your sugar substitute can be used in baking and if it can be measured exactly like sugar. Some sugar substitutes do not replace sugar cup for cup.
