How to cook healthy and lowfat-- veggie beef tacos

Everyone loves beef tacos, but ground beef is fattening! Here's a great receipe for those who want the taste of ground beef tacos but don't want the fat and calories!

Instructions

Things You'll Need:

  • Morningstar farms crumblers (veggie protein)
  • 1 box of super stuffer taco shells
  • Taco seasoning
  • 1 can of corn
  • non fat sour cream
  • lettuce
  • tomatoes
  • salsa
  • onion
  • light cheddar cheese (optional)
  1. Step 1

    Brown the morningstar farms grillers on medium heat(www.morningstarfarms.com) which is textured soy protein product that looks and tastes just like ground beef! No need to add oil.

    Add the taco seasoning and follow the directions for the seasoning mix.

  2. Step 2

    Chop up your veggies! Chop up lettuce, tomatoes and onion. Open the can of corn (fiesta corn is always a good choice) and put in the microwave for 2 minutes (or heat in a sauce pan until warm).

  3. Step 3

    Heat the taco shells in the over as directed on the box. I like to you Super Stuffer taco shells.

    Place each ingredient in a separate bowl so that you and your friends can easily put together your tacos: shredded cheese, non-fat sour cream, corn, lettuce, salsa, tomatoes, onion, soy beef, and hot sauce (if desired).

    Build tacos and OLE! Enjoy!

Tips & Warnings
  • add some chips and salsa (low fat chips!)
  • make some margaritas too- a little mexican fiesta!
  • you will be stunned at how good the soy protein is and how much it tastes like real beef without the calories and guilt!
  • make sure you use cheese sparingly to keep the calories low.
  • If you drink some margaritas, don't drive!
