How to Roast Eggplant

  • 4 medium sized Japanese eggplant
  • Olive oil
  • Salt (to taste)
  • Pepper (to taste)
  • Dried oregano
  • Garlic
  • Non-stick spray
  • Baking sheet

      Turn your oven on to 425 degrees so it can begin to pre-heat.

      Cut your eggplant lengthwise in strips that are 1/4 to 3/8 of an inch thick.

      Spray your baking sheet with the non-stick spray and arrange your eggplant in a single layer on the baking sheet.

      Peel and mince three medium cloves of garlic. Then toss in a side bowl.

      Add oregano, salt and pepper into the bowl and mix the ingredients well. This will give you a dry rub.

      Generously drizzle the eggplant on the baking sheet with olive oil.

      Sprinkle the dry rub evenly over the eggplant.
