There is nothing like adding fresh roasted corn to a meal. But if you think roasting corn is only something to do in the summer on the grill than you have to try this recipe. It will warm up those winter nights with some summer zest. Here's a great recipe to roast corn.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 8 ears of corn
  • 1 tsp. dried oregano
  • 1 1/2 tsp. salt
  • 1/2 cup butter
  • 1 1/2 tsp. chopped chives
  • 1 tsp. garlic salt
  • Baking tray
  • Non-stick spray
  • Tin foil
  • Pastry brush
  1. Step 1

Pre-heat the oven at 350 degrees.

  2. Step 2

Spray a baking tray with non-stick spray.

  3. Step 3

Pull back husks from corn, but leave the husks attached from the stem. Also remove the silk from the corn and discard. Place the husks of corn on the baking sheet.

  4. Step 4

Combine garlic salt, chopped chives, butter, dried oregano and salt in a bowl. Mix until blended.

  5. Step 5

Brush the butter mixture generously with the pastry brush onto each ear of corn.

  6. Step 6

Push the husks back over the buttered corn and wrap each individually with tin foil.

  7. Step 7

Place the corn in the oven and roast for 35 minutes. The corn will begin to brown. Then take out, let cool for five minutes and serve.
