From Quick Guide: Salad Recipes
Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 large (15 14/oz.) can of sliced pineapple
  • 8 to 10 medium bananas
  • 1 cup chopped pecans
  • 1/4 cup sugar
  • 2 tbsp. cornstarch
  • 2 tbsp. lemon juice
  1. Step 1

Drain the pineapple and reserve the juice. Chop the pineapple into bite-sized pieces and set them aside.

  2. Step 2

Mix the sugar and cornstarch together in a medium saucepan. Add the reserved pineapple juice and incorporate well.

  3. Step 3

Cook it over medium heat, stirring constantly, until the sauce begins to thicken and turn clear.

  4. Step 4

Remove the saucepan from heat and cool mixture completely.

  5. Step 5

Slice the peeled bananas and sprinkle them with lemon juice to prevent browning.

  6. Step 6

Mix the bananas, pineapple, pecans and the cooled sauce in a pretty serving bowl.

  7. Step 7

Cover with plastic wrap and refrigerate for 4 to 5 hours before serving to allow flavors to combine.

Tips & Warnings
  • Don't make this fruit salad too far in advance as browning will occur after about 10 or 12 hours.
  • Don't substitute crushed pineapple or tidbits in this recipe because they contain less juice than a can of sliced pineapple.
