How to Make Polenta and Goat Cheese Salad

Polenta is an Italian specialty made with ground corn meal and boiled water. This dish can be eaten in its creamy form or sliced and fried in chunks. Polenta and goat cheese salad gives you a little taste of Italy by topping your lettuce with slices of polenta smothered in melted goat cheese.

Instructions

Difficulty: Easy

Things You’ll Need:

  • 2/3 lb. ready-to-use polenta
  • 4 oz. goat or creamy, spreadable cheese
  • 2 tbsp. salad dressing (any variety)
  • Lettuce (any type)

Step1
Cut the ready-to-use polenta into ¼-inch-thick slices.
Step2
Place the polenta slices onto a cookie or baking sheet. Broil the slices in the oven until they are golden brown--about 7 minutes. Flip them over and broil for another 7 minutes or so.
Step3
Take the polenta out of the oven. While the polenta is still on the cookie or baking sheet, spread the goat cheese on one side only of each slice.
Step4
Broil the polenta and cheese in the oven until the cheese is bubbly--about 5 minutes.
Step5
Mix the salad dressing of your choice in a large bowl with the lettuce. Toss the salad well enough to cover each leaf with the dressing.
Step6
Grab two plates and divide the salad mixture between them. Put the polenta slices on top of the salad.

Tips & Warnings

  • If you cannot find polenta in the pre-made solid form, buy some polenta flour and follow the package directions to make solid polenta that can be broiled.
