Elote is Mexican corn on the cob and is considered an appetizer. If you haven't tried it, you're missing a real taste experience. An enormously popular item sold by street vendors, an ear of corn is grilled, covered with mayo and sprinkled with a grated cheese and chili mix. You can also make chili con elote, elote soups, or even tamales de elote using corn scraped off the ear.

Instructions

Difficulty: Moderately Easy

Things You’ll Need:

  • 3 tablespoons fat-free mayonnaise
  • 2 teaspoons lime juice
  • 2 tablespoons grated Parmesan cheese
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground red pepper
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 4 ears shucked corn
  • Cooking spray

Step1
Gather the ingredients listed under "Things You'll Need" and prepare your indoor or outdoor grill for four ears of corn.

Step2
Combine mayonnaise and lime juice in a small bowl. Combine cheese, chili powder, ground red pepper, ground cumin and salt in another small bowl.

Step3
Shuck the corn and place the ears on a grill rack coated with cooking spray. Turn frequently and grill for about 12 minutes or until the ears are tender.
Step4
Remove corn from grill. Brush with mayonnaise mixture and sprinkle with cheese mixture. Serve immediately.

Step5
Try out other recipes using elote. You can make a tamale de elote with a batter of ground fresh corn, sugar and margarine. Steam the corn and you'll have a sweet treat.

Tips & Warnings

  • Elote tastes better if fresh, yellow corn is used.
