How to Make Skillet Lasagna

Everyone loves Italian food and lasagna tops the list of favorites. But if the thought of hours over a hot stove just wears you out before you start, this recipe is for you. Skillet Lasagna is made on top of the stove: no oven to preheat, no noodles to boil, just let it simmer for half an hour and you've got enough homemade lasagna to serve 6 to 8 guests.

Instructions

Things You'll Need:

  • 1 lb. lean ground beef
  • 2 tbsp. butter or margarine
  • 2 ½ oz. pkg. dry spaghetti sauce mix
  • 1 pkg. lasagna noodles uncooked
  • 1 pt. small curd cottage cheese
  • 1 tbsp. dried or fresh basil
  • 1 tbsp. dried or fresh parsley
  • 1 tsp. salt
  • 3 ½ cups chopped tomatoes
  • 1 cup water
  • 2 cups shredded mozzarella cheese
  • 1 large non-stick skillet with lid
  1. Step 1

    Brown ground beef in skillet until crumbly and drain fat.

  2. Step 2

    Mix salt, basil, parsley and half mozzarella cheese with cottage cheese.

  3. Step 3

    Sprinkle ½ pkg. dry spaghetti sauce mix over beef.

  4. Step 4

    Layer ½ pkg. uncooked noodles over beef and sauce mix.

  5. Step 5

    Spread ½ cottage cheese mixture over noodles.

  6. Step 6

    Repeat noodle and cottage cheese layers.

  7. Step 7

    Pour tomatoes and water over lasagna noodles.

  8. Step 8

    Sprinkle with remaining dry spaghetti sauce mix.

  9. Step 9

    Cover tightly and simmer on stovetop for 30 to 35 minutes.

  10. Step 10

    Pierce noodles with fork to test for for doneness.

  11. Step 11

    Top with remaining mozzarella cheese and cover with lid until cheese melts.

  12. Step 12

    Remove from heat and let lasagna sit for 10 minutes before serving.

Tips & Warnings
  • Chopped onions, bell peppers and clove of garlic can be added to beef as it browns for extra flavor.
  • Serve with garlic bread and a side salad to complete the meal.
