How to Make a Cajun Fig Cake

Fig trees are a garden staple in southwest Louisiana and it is customary to find brown paper bags of figs left on the front stoop as a gift from a neighbor. This cake makes excellent use of those sweet, fresh figs. As this cake is quite rich, it can be served plain, iced or simply sprinkled with powdered sugar.

Instructions

Things You'll Need:

  • 1 cup heavy cream
  • 2 cups sugar
  • 1 cup shortening
  • 2 cups all purpose flour
  • 1 1/2 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 3 eggs
  • 1 1/2 tsp. ground nutmeg
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup buttermilk
  • 1 cup coarsely chopped pecans
  • 1 cup mashed fresh figs or fig preserves
  1. Step 1

    Preheat oven to 300 degrees F. Grease and flour cake pan.

  2. Step 2

    Blend cream, sugar and shortening until light and fluffy. Add eggs, one at a time, beating after each egg until completely blended.

  3. Step 3

    Combine flour, cinnamon, cloves, nutmeg, baking soda and salt in a separate bowl. Stir together until completely blended.

  4. Step 4

    Add blended dry ingredients to creamed mix, alternating with buttermilk until all is blended and smooth.

  5. Step 5

    Add pecans and figs.

  6. Step 6

    Pour batter into prepared pans and bake 1 hour and 15 minutes or until toothpick inserted into middle comes out clean.

Tips & Warnings
  • This recipe will make 1 small round or square cake and 1 small loaf cake. You can also make several individual loaf cakes for gifts. These are wonderful cakes to take to family gatherings, give to office mates or freeze and keep for Christmas gifts.
  • Wrap in foil and place in plastic freezer bags before freezing.
