Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 6 oz. cleaned crawfish tails
  • 2 eggs
  • 1/4 cup finely chopped bell peppers
  • 1/4 cup finely chopped green onions
  • 1 tbsp. crushed garlic
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 1/2 cups flour
  • 1/2 cup milk
  • Seasoning
  • 2 qts. vegetable oil for deep fryer
  1. Step 1

Heat the oil in a deep fryer to 365 degrees F by medium to high heat. Start the deep fryer now so by the time you are done mixing ingredients the fryer will be hot.

  2. Step 2

Mix the eggs in a large bowl until they are foamy. Add the crawfish to the eggs in the bowl. Sprinkle with seasoning.

  3. Step 3

Stir in the milk, flour, baking powder, garlic, salt, bell peppers and green onions with the eggs and crawfish. This should be stirred to a thick consistency.

  4. Step 4

Drop the mixture into the oil with a tablespoon. Let it fry for about 3 minutes. When they are done, they will be a nice golden brown color and crispy.

  5. Step 5

Remove the mixture with a large slotted spoon so that the hot oil will stay in the fryer. Place them on paper towels to drain out some of the oil.

  6. Step 6

Sprinkle seasoning onto the beignets while they are wet with oil. Once they are cooled a little you can serve the beignets.
