Start by looking online to find companies that are hiring Restaurant Evaluators.

Contact restaurants directly (and discreetly). Ask to speak to the manager and offer your services. Fast food establishments are a good place to start.

Check out your local paper in the classifieds section, and see if there is any information about companies hiring for this type of work.

Peruse the Dining Section (or the equivalent of that) of your local newspaper. Many times the reviews are written by Restaurant Evaluators, and they may have information there about jobs.

Look over the requirements that your hiring company wants you to judge before you visit the restaurant. You may not be able to take notes while dining (to protect your anonymity).

Dine in the food establishment, and evaluate it based on the criteria given to you. You may have to judge things like whether or not you were greeted at the door, how fast you were seated and how attentive your waiter was. At fast food restaurants, you may be examining details like the ease of ordering or the appearance of the bathrooms.

Turn in your findings and receipt to your hiring company. You will be reimbursed for your meal and sometimes even a guest's food as well. Usually, companies pay per assignment completed, not per hour.

"Restaurant Evaluator" is also often called "Mystery Shopper." The term 'Mystery Shopper" is used to describe the evaluation of stores, restaurants, hotels and apartment complexes.
Some evaluations are done incognito, where the staff doesn't know what you're doing and other times you will be out in the open.
Some companies will require you to carry a hidden camera to record your experience.
Don't pay money to become a Restaurant Evaluator or Mystery Shopper. Some websites or companies will ask you for money to see one of their lists; this is a scam.
Expect to pay for your meal and then get reimbursed for it afterwards. This is generally the way the hiring companies operate.
