Instructions

    • 1

Gather the ingredients and cooking supplies you will need. Staple ingredients will include the following: 2 eggs, 2 cups of flower, 2 3/4 cups milk, 1/4 cup vegetable oil, 2 tablespoons melted butter, 3 tablespoons sugar, 1 1/2 tablespoons baking powder and salt. Cooking supplies include the following: long handle spatula, griddle, mixing bowl and mixing spoon.

    • 2

Start by adding the eggs into your bowl and then beating them until they are sufficient for scrambling, but not frothy.

    • 3

Add the remaining ingredients and mix them together with your spoon or a mixer.

    • 4

Grease your griddle with butter and then heat the griddle. Wait until the butter is slightly bubbling.

    • 5

Measure about 3 tablespoons of mixture into a measuring cup. You may measure more if you want larger pancakes. Just remember that the more you use for each pancake, the fewer pancakes you will have.

    • 6

Pour mixture onto greased griddle and allow your pancakes to cook until you see the edges get dry. You may also see the top of your pancake begin to bubble a bit.

    • 7

Flip your pancake using the long handled spatula. Allow the other side to cook for about two minutes.

    • 8

      Serve your pancakes immediately.

Tips & Warnings

  • Put your mixture in the refrigerator for 20 to 30 minutes before cooking if possible.

  • Make healthy pancakes by substituting egg beaters for eggs and using low-fat or fat free milk.

  • Vary your pancake recipe by adding fruits such as: blueberries, strawberries, apples or raspberries.

  • For dinner pancakes, try sweet potato pancakes or scallion pancakes. There are endless possibilities.

  • Do not beat your mixture too much. It's okay if there are some small clumps.

they are not very clear on the salt and baking powder amount! i followed the instructions exact, when the batter was done it was very runny!! I cooked them up anyways only to find out I had made a salt crepe! Yuck!!! So I modified the recipe just a bit by looking at other recipes and combining them all. This is what I came up with. 2 Eggs 2 cups Flour 2 Tablespoons Melted Butter 1 1/2 TEASPOONS Baking Powder NO SALT 3 Tablespoons Sugar 1 Teaspoon Cinnamon Milk ( I poured a little at a time until I got the consistency I liked) I didn't put the Vegetable oil in my batter so I don't know what the difference would be with it in the batter. My husband said the pancakes were really good!! I would have to agree with him!

Not many people use the vanilla, but I'm telling you I NEVER make pancakes without it. I even add it to the "add water and mix" kind. Makes such a delicious difference! Congrats on your wedding! I have recomn'd you. Pay it forward! ;-)

I didn't know about the rating thing. Had to come back to give you a rating. I have some blueberries in my freezer that would be good in the pancakes too!! UMMM!!
