This was quite easy to make and kind of fun...I'm trying to make my boyfriend eat less meat and he reports this was very filling, though the word "flan" through him off (dessert for brunch? he was quite excited until I said spinach) Anyway the only substitution I made was mozzarella for cheddar and only two egg yolks... went well with cantaloupe on the side.
